Apple Puffs
Recipe For Apple Puffs (Filling)
3 green apples (350g) -skin, core and chop finely ( original recipe use red apples)
70 g castor sugar
1/3 cup water
1tsp cinnamon powder
1 tbsp lemon juice
1/2 tbsp butter
1/4 tbsp flour, to thicken

To make the filling
- Cook apples in water and sugar in a heavy-based saucepan. Simmer until apples turn soft.
- Add cinnamon powder, lemon juice and butter and continue to cook until mixture reaches the right consistency (can sift in flour to thicken further).
- Dish out to cool.
To make the puffs
- On the lightly floured surface roll out into a sheet of 2mm thickness.
- Cut out 10cm x 6 cm rectangles.
- Spread 1 1/4 tbsp of the apples filling on each rectangle. Damp the edges and close up with another piece of rectangle.
- Press the edges together well to seal. Use a fork and press down on the edge of the pastry to form a decorative pattern.
- Place puffs on the baking tray and chill for 10 min.
- Glaze the puffs with beaten egg yolk and bake in preheated oven at 180 degree celcius for 15 min or until they turn golden brown.

Baked Macaroni
Recipe For Baked Macaroni Pastichio (20 servings)
2 lb round of beef ground
4 chicken sausages (sliced) - optional
4 tbsp butter
2 onions (chopped fine)
2 tsp salt
1/4 tsp pepper
2 tbsp tomato paste
1 cup water
1 1/4 lb macaroni
1/2 cup butter (melted)
12 eggs
1 qt milk
3 cup grated parmesan cheese
bread crumbs
shredded cheese
Method
- Saute ground beef and onion in 4 tbsp butter. Season with salt and pepper. Add tomato paste, water; simmer until moisture is absorbed about 40 min.
- Cook macaroni in salt water until almost done. Pour into colander, rinse and drain well. Mixed with melted butter.
- Brush large baking pan, 14 x 11 (inch) with butter, sprinkle with bread crumbs than grated cheese.
- Place half buttered macaroni in pan, sprinkle with grated cheese and cover with beef mixture, spreading evenly over entire surface.
- Sprinkle grated cheese or sharp cheese over meat and cover with remaining macaroni.
- Sprinkle grated cheese and bread crumbs over top.
- Beat eggs until light and fluffy; mix with milk. Spoon a little of egg mixture over crumbs until thoroughly moistened, then carefully pour the remaining mixture over all.
- Bake in 175 degree celcius oven about 1 hour or until lightly browned on top and firm when tested with silver knife. Let stand 15 min before cutting.
