Apple Puffs

Recipe For Apple Puffs (Filling)

3 green apples (350g) -skin, core and chop finely ( original recipe use red apples)
70 g castor sugar
1/3 cup water
1tsp cinnamon powder
1 tbsp lemon juice
1/2 tbsp butter
1/4 tbsp flour, to thicken

Method

To make the filling
  1. Cook apples in water and sugar in a heavy-based saucepan. Simmer until apples turn soft.
  2. Add cinnamon powder, lemon juice and butter and continue to cook until mixture reaches the right consistency (can sift in flour to thicken further).
  3. Dish out to cool.
(Note: For pastry, I used 1 packet of ready roll pastry)

To make the puffs
  1. On the lightly floured surface roll out into a sheet of 2mm thickness.
  2. Cut out 10cm x 6 cm rectangles.
  3. Spread 1 1/4 tbsp of the apples filling on each rectangle. Damp the edges and close up with another piece of rectangle.
  4. Press the edges together well to seal. Use a fork and press down on the edge of the pastry to form a decorative pattern.
  5. Place puffs on the baking tray and chill for 10 min.
  6. Glaze the puffs with beaten egg yolk and bake in preheated oven at 180 degree celcius for 15 min or until they turn golden brown.
