Roasted Chicken with Corn Rice and Egg Madras


























Resipi Ayam Panggang

1 ekor ayam (dibersih dan ditoskan)
1 1/2 sudu besar chicken seasoning (jamaican seasoning)
2 sudu kecil serbuk lada putih
2 sudu besar lada hitam ( ditumbuk kasar)
2 sudu besar madu
2 sudu besar olive oil
1 labu bawang putih (dibelah dua bersama kulit)

Cara-Cara

  1. Lumurkan ayam dimulai dengan 1 sudu kecil sebuk lada putih, kemudian chicken seasoning, kemudian 1 sudu kecil lagi serbuk lada putih dan kemudian lada hitam yang telah ditumbuk kasar tadi.
  2. Tuangkan madu dan olive oil di atas ayam yang telah dilumur tadi ke keseluruhan bahagian atas badan ayam.
  3. Masukkan bawang putih yang dibelah kedalam perut ayam.
  4. Perap selama 2-4 jam.
  5. Masukkan ayam yang telah diperap ke dalam oven dan masak pada suhu 220 darjah celcius selama 45 minit. Terbalikkan ayam setelah 30 minit.

Tips:

  • Madu hanya dituang tidak dilumur kerana madu tersebut akan menyebabkan bahan-bahan yang dilumur tadi menjadi bergentel dan tidak sekata pada badan ayam.
  • Jangan masukkan garam sekiranya menggunakan seasoning ini.
  • Kalau perap semalam lagi sedap.
  • Boleh tambahkan lada hitam ikut citarasa masing-masing

Alhamdulillah... hasilnya tidak pernah mengecewakan.....

Resipi Nasi Jagung (Corn Rice)

2 1/2 cawan beras (dibasuh dan ditoskan)
1/2 tin jagung ( dari tin jagung yang kecil)
3/4 cawan susu cair / susu segar
air mengikut sukatan beras
garam secukup rasa

Bahan Tumis:

1/2 inci kulit kayu manis
1 kuntum bunga lawang
4 kuntum bunga cengkih
1 biji buah pelaga
1 halia ( dihiris nipis)
1 labu bawang besar (dimayang)
1 batang serai (dititik)
2 sudu makan minyak

Cara-Cara

  1. Basuh dan toskan beras.
  2. Panaskan minyak di dalam periuk nasi, bila minyak panas masukkan serai, bunga lawang, bunga cengkih, buah pelaga dan kulit kayu manis. Kemudian masukkan bawang dan serai, goreng sehingga naik bau.
  3. Masukkan susu cair/segar dan garam kacau rata dan biar seketika.
  4. Masukkan beras yang ditos tadi dan kacau rata kemudian masukkan jagung.
  5. Masukkan air sedikit-sedikit sambil sukat sukatannya. Kacau sebati.
  6. Masuk nasi periuk tadi ke dalam "rice cooker" dan masak seperti nasi putih.

Tips:

  • Lebih elokkan sekiranya menggunakan beras basmathi.
  • Masukkan beras dahulu sebelum air, dapat menggelakkan nasi menjadi antah kerana air dapat disukat sebetulnya seperti memasak nasi putih. Alhamdulillah dengan kaedah ini saya tidak mengalami nasi antah lagi.
  • Setelah nasi masak, kacau rata semasa ia masih basah di dalam rice cooker dan tutup sebentar. Kemudian swich off the rice cooker untuk mengelakkan nasi terlalu kering semasa dihidangkan.
  • Sekiranya nasi menjadi kering, jangan masukkan air, sebaiknya kukus nasi tersebut sebelum dihidangkan.
  • Tips memasak nasi ini boleh digunakan untuk memasak semua jenis nasi.

Apam Balik

Sambil tengok tv lepas lunch, dok fikir nak masak apa untuk minum petang. Teringin nak makan apam balik. Kalau kat Malaysia, boleh pie beli je kat pasar malam. Duduk merantau nie, semuanya kena masak sendiri. Belek punya belek buku resipi ada resipi apam balik. So apalagi....terus pie masak.... masak dalam non stick pan je... tapi rasanya kurang garing and rangup mungkin api kuat sangat...next time kena perlahankan api tu sikit....tapi rasa apam balik tu memang ada. Siap untuk minum petang hari tu.... Kalau nak cuba, cuba la seperti resipi dibawah.
















Resipi Apam Balik


2 cawan tepung gandum
1/2 cawan gula
1/2 camca kecil soda bikarbonat
1 camca kecil pewarna kuning
1 biji telur
2 cawan air
1/2 camca kecil baking powder

Untuk tabur:

1 cawan kacang tanah (digoreng tanpa minyak kemudian di kisar / tumbuk kasar jgn terlalu halus)
1 tin jagung (kat sini tak dak jagung mcm kat Malaysia, so I blend 1 small can sweet corn dan masak dengan 2 tbsp of custard and 2 tbsp milk, masak sampai pekat)

1 cawan gula
sedikit mentega


Cara-Cara

  1. Pukul gula bersama telur hingga kembang, masukkan soda, air, baking powder dan pewarna kuning. Pukul sehingga sebati.
  2. Masukkan tepung dan pukul lagi supaya ianya tidak bergentel.
  3. Panaskan non-stik pan, ambik satu senduk dan tuangkan ke dalam pan dan lenggang pan untuk menipiskan dan meratakannya.
  4. Tutup pan sebentar, apabila 1/2 masak, tabur bahan tabur tadi dan masak sehingga kekuningan.

Makan panas-panas.....hemmm sedapnya.

Chicken Soup Hor Fun

I bought fresh hor fun from china town yesterday. Mandy, my friend showed me the shop which sells halal hor fun. Since my children like to eat soup , so I decided to cook Chicken Soup Hor Fun for our lunch. Actually, 1 packet of Hor Fun is not enough for us, as a result I have to add it with vermicelli (meehoon).

Afif dan Afiq suka makan sup nie sampai hirup kuah.. SSrrrrppp...SSrrrppp...

Recipe for Chicken Soup Hor Fun

1 packet of Hor Fun (sliced)

For chicken soup:

3 pieces chicken thigh (cut into cube)

1 stick celery (sliced)

2 garlic (sliced)

1 inch ginger

1 chicken cube

1/2 tsp white pepper

3 bowls of water

2 fish cake (sliced)

For Garnishing:

2 hands full of bean sprout

2 spring onion

fried onion

Note: Serve together with chili soy sauce.

Happy 4th BDay Afiq 19.08.08

2 days before Afiq's birthday, I asked him what he wants for his birthday..... happily said that he only wants carrot cake....his favourite cake besides chocolate cake. A day before his birthday, he saw me look so tired and maybe he feels guilty asking for carrot cake then and he said "mama if you're tired, just make a small carrot cake". Kesianmya anak mama.... so on his birthday I make this cake...

Nasi Lemak Ayam Goreng Berempah Kedekut

Chocolate Chips Muffin

Recipe for Chocolate Chips Muffin (12 cups)

The ingredients:

125g butter

100g sugar

150g self raising flour

2 eggs

2 tbsp cocoa powder

25g dark-choc (melted)

choc chips

Methods:

  1. Mix all the ingredients except melted dark-choc and choc chips in a mixer until inccorrelated.
  2. Then add in melted dark choc and choc chips
  3. Scoop into paper cups
  4. Bake in preheated oven for 15 minutes on 175 degrees celcius.

Note:

I also make a vanilla muffin using this recipe; replace the dark-choc with vanilla flavour and corn muffin by replacing dark-choc with vanilla/corn flavour and choc-chips with sweet corn.

Children Sweet Cake

I made this cake to bring to our friend's house... my girls helped me on the decoration....


Recipe for Children Cake

Cake ingredients:

350g plain flour

175g caster sugar

175g unsalted butter

3 level tsp cream of tartar

1 1/2 level tsp bicarbonate of soda

110ml milk

3 eggs

Topping ingredients:

200g icing sugar

300g cream cheese

Methods:

  1. Preheat oven gas mark 3, 170 degree celcius
  2. Combine flour,sugar,cream of tartar and bicarbonate of soda in a large mixing bowl
  3. Gently melt the butter in a small suacepan
  4. In a smaller bowl, beat the eggs thoroughly
  5. Pour the melted butter into the beaten eggs then pour the mixture on to the dry ingredients,stirring to blend thoroughly
  6. Add the milk then pour the mixture into the prepared tin and bake on the centre shelf for about 35 minutes or until the centre fells springy.
  7. Let the cake cool in the tin for 10 minutes then turn it out to a wire cooling rack.
  8. When absolutely cool, pour the topping on, which you make by sifting the icing sugar into a bowl and mixing with the cream cheese.
  9. Serve cut into small square.



Lebihan kek yang dipotong untuk menyamaratakan bahagian atas kek sebelum diletak topping.

Sate: My First Attempt


Recipe for Peanut Sauce (Kuah Kacang) :original recipe from Chef Wan

Ground to paste:

4 stalks lemon grass, sliced

1cm galangal

1cm ginger

1 tsp cumin seeds

1 tbsp coriander seeds

4 tbsp chili paste

4 tbsp vegetable oil

300gm roasted peanuts, ground coarsely

1 cup water

1/4 cup thick tamarind juice (strained from 2 tbsp tamarind pulp mixed with 1/4 cup water)

4 tbsp sugar

100gm palm sugar

salt to taste

Method:

1. Heat the oil in a pot and fry the paste till fragrant

2. Add the ground peanuts, water, tamarind juice, sugar, palm sugar and salt

3. Simmer till thick.
