Pulut Inti

Apple Puffs

Recipe For Apple Puffs (Filling)

3 green apples (350g) -skin, core and chop finely ( original recipe use red apples)
70 g castor sugar
1/3 cup water
1tsp cinnamon powder
1 tbsp lemon juice
1/2 tbsp butter
1/4 tbsp flour, to thicken

Method

To make the filling
  1. Cook apples in water and sugar in a heavy-based saucepan. Simmer until apples turn soft.
  2. Add cinnamon powder, lemon juice and butter and continue to cook until mixture reaches the right consistency (can sift in flour to thicken further).
  3. Dish out to cool.
(Note: For pastry, I used 1 packet of ready roll pastry)

To make the puffs
  1. On the lightly floured surface roll out into a sheet of 2mm thickness.
  2. Cut out 10cm x 6 cm rectangles.
  3. Spread 1 1/4 tbsp of the apples filling on each rectangle. Damp the edges and close up with another piece of rectangle.
  4. Press the edges together well to seal. Use a fork and press down on the edge of the pastry to form a decorative pattern.
  5. Place puffs on the baking tray and chill for 10 min.
  6. Glaze the puffs with beaten egg yolk and bake in preheated oven at 180 degree celcius for 15 min or until they turn golden brown.


Baked Macaroni


Recipe For Baked Macaroni Pastichio (20 servings)

2 lb round of beef ground
4 chicken sausages (sliced) - optional
4 tbsp butter
2 onions (chopped fine)
2 tsp salt
1/4 tsp pepper
2 tbsp tomato paste
1 cup water
1 1/4 lb macaroni
1/2 cup butter (melted)
12 eggs
1 qt milk
3 cup grated parmesan cheese
bread crumbs
shredded cheese

Method
  1. Saute ground beef and onion in 4 tbsp butter. Season with salt and pepper. Add tomato paste, water; simmer until moisture is absorbed about 40 min.
  2. Cook macaroni in salt water until almost done. Pour into colander, rinse and drain well. Mixed with melted butter.
  3. Brush large baking pan, 14 x 11 (inch) with butter, sprinkle with bread crumbs than grated cheese.
  4. Place half buttered macaroni in pan, sprinkle with grated cheese and cover with beef mixture, spreading evenly over entire surface.
  5. Sprinkle grated cheese or sharp cheese over meat and cover with remaining macaroni.
  6. Sprinkle grated cheese and bread crumbs over top.
  7. Beat eggs until light and fluffy; mix with milk. Spoon a little of egg mixture over crumbs until thoroughly moistened, then carefully pour the remaining mixture over all.
  8. Bake in 175 degree celcius oven about 1 hour or until lightly browned on top and firm when tested with silver knife. Let stand 15 min before cutting.
(Note: To prepare 1/2 of the above recipe, use 10 inch square, 2 1/2 deep inch baking pan, bake 175 degree celcius for 30-40 min)

Sambal Tumis Udang



Ikan Tenggiri Masak Taucu

Recipe For Ikan Tenggiri Masak Taucu

Bahan-bahan

3 keping ikan tenggiri (dipotong 2)
3 sudu besar taucu
3 biji cili merah (dihiris)
1 biji bawang besar (dipotong bulat)
1/2 inci halia (dihiris)
2 ulas bawang putih (dihiris)
1/2 mangkuk air asam jawa
sedikit serbuk kunyit
minyak
garam secukup rasa

Cara-cara

  1. Lumurkan ikan dengan serbuk kunyit dan garam. Goreng hingga garing
  2. Panaskan minyak, tumis cili merah, bawang besar, halia dan bawang putih.
  3. Masukkan taucu, setelah itu masukkan air asam jawa dan masak sehingga mendidih.
  4. Masukkan ikan tenggiri, angkat dan hidangkan.

Kuih Ketayap / Gulung


Recipe For Kuih Ketayap or Kuih Gulung

Bahan Kulit (Batter)

1 cawan tepung gandum
1 cawan jus air pandan ( mesin 5 helai pandan + 1 cawan air)
1/2 cawan santan / susu segar
1 biji telur
Beberapa titik pewarna hijau
Secubit garam

Bahan Inti

150g gula merah
3 sudu besar gula
1/2 cawan air
1/2 cawan kelapa parut ( dessicated coconut)

(nota: sekiranya tiada pandan, gantikan 1 cawan jus pandan dengan 1 cawan air dan tambahkan pewarna hijau)

Cara-cara
  1. Untuk Inti, masukkan bahan ini ke dalam periuk.
  2. Masak di atas api sederhana dan kacay sehingga sebati dan melengas. Angkat dan ketepikan.
  3. Untuk kulit, masukkan semua bahan ke dalam 'blender' dan kisar. Tapiskan bahan yang telah dikisar.
  4. Panaskan 'non-stick pan' yang telah dilengser dengan sedikit minyak.
  5. Tuangkan 1 senduk adunan & lenggangkan 'non-stick pan' supaya adunan rata & nipis.
  6. Setelah masak, angkat dan ketepikan.
  7. Masukkan inti ditepi dan lipatkan bahagian kiri dan kanan dan gulung kemas-kemas.
  8. Lakukan sehingga selesai.

Kuih Bakar / Kemboja


Recipe For Kuih Bakar/Kemboja

1 cup of sugar
1 cup of water (or pandan juice)
2 cups of wheat flour (all purpose flour)
450 ml of milk
2 tbsp of butter (melted)
3 eggs
1/2 tsp of salt
2 tbsp of sesame
A few drops of green food colouring

Methods
  1. Preheat oven to 180C
  2. Blend all the ingredients
  3. Pour batter in greased pans and sprinkle with sesame
  4. Bake in preheated oven until it turn brown or a toothpick inserted into the centre come out clean.

Kurma Daging

Recipe For Kurma Daging (Beef Korma)

500g daging
100 ml santan
450 ml air

Bahan Kisar:
3 tbsp rempah kurma
1 labu bawang besar
2 ulas bawang putih
1 inci halia

Bahan Tumis:
2 inci kulit kayu manis
1 bunga lawang
5 bunga cengkih
1 biji buah pelaga
3 tbsp minyak masak

1 biji cili merah
1 biji cili hijau
250g ubi kentang ( potong 4 )
Garam secukup rasa

Cara-cara

1. Kisar semua bahan kisar bersama 1 cawan air sehingga lumat,
2. Panaskan minyak masak di dalam periuk dan tumis bahan tumis,
3. Masukkan rempah yang dikasar dan masak sehingga naik wangi,
4. Masukkan daging dan air serta santan dan masak sehingga daging empuk dengan api perlahan,
5. Masukkan ubi kentang yang telah dipotong dan masak sehingga hampir empuk.
6. Masukkan cilimerah dan cili hijau yang telah dibelah dua dan masak sehingga mendidih.
7. Masukkan garam dan hirisan daun sup,
8. Biarkan di atas api yang perlahan sehingga pecah minyak.
9. Sedia untuk dihidangkan
